The dish harmoniously contrasts soft courgettes and spring onions, cooked delicately in olive oil, with a room-temperature salsa of ripe tomatoes, garlic, and basil. Allowing the tomatoes to rest for at least 20 minutes enhances their natural juices and flavor.

Incorporating a variety of tomatoes, such as sweet cherry types and firmer ones, adds depth in both flavor and texture. The use of smaller courgettes is recommended for their subtler taste, and fresh basil infuses the dish with a fragrant aroma. This recipe is versatile, pairing well with both long and short pasta shapes like linguine, spaghetti, farfalle, and radiatori, all of which soak up the rich dressing beautifully. Adding a small amount of starchy pasta water during the cooking process helps create a silky sauce, ensuring the pasta is evenly coated.

The recipe calls for two large courgettes, either grated or sliced thin, along with three to four finely sliced spring onions and 400 grams of diced ripe tomatoes. The ingredients are complemented by seven tablespoons of olive oil, a handful of torn fresh basil leaves, a pinch of dried oregano, and half a finely chopped garlic clove. Salt is added to taste, and 450 grams of pasta completes the dish. The cooking process begins with boiling a large pan of salted water to cook the pasta according to package instructions.

While the pasta is cooking, the diced tomatoes are combined in a bowl with three tablespoons of olive oil, basil, oregano, garlic, and salt, then left to rest. In a large frying pan, the remaining olive oil is heated to gently cook the spring onions until softened. The courgettes are then added and cooked for about five minutes, with a splash of pasta water to soften the vegetables without browning them. Once the pasta is cooked, it is transferred directly to the pan, tossed well to coat with the courgette mixture, and then mixed thoroughly with the tomato salsa.

Garnished with extra basil, this dish is served immediately, offering a refreshing taste of summer. The pasta can be enjoyed on its own or enhanced with soft cheeses like ricotta or mozzarella for an added layer of creaminess. This recipe is a celebration of seasonal produce, showcasing how simple ingredients can be transformed into a delightful culinary experience.
